Finishing options:

• Single-sided or Double-sided printing — big cost/paper saver customers should choose upfront
• Paper weight — standard (20lb) vs. heavier cardstock (for covers, resumes, presentations)
• Cover sheets — clear plastic front cover + cardstock back cover (common with spiral/comb binding)
• Color vs. B&W per page — useful if a document has mostly B&W pages with a few color pages (some print shops charge per-page-type rather than whole-document)
• Lamination — for single sheets that need durability (menus, signs, ID cards)

My honest recommendation for a first launch: don’t offer all of these as WooCommerce product variations right away — that gets complex fast (binding × paper × color × sides = a lot of price combinations). Start with:

• Stapled / Spiral / Comb / None (binding — as a dropdown)
• Single/Double-sided (as a dropdown)
• B&W vs Color (as a dropdown, tied to your existing per-page pricing)
